- 1 tablespoon chopped pimiento
- 2 finely chopped green onions
- 2/3 cup sour cream
- 1 tablespoon red wine or balsamic vinegar
- 2 teaspoon lemon juice
- 1 teaspoon sugar
- 3/4 teaspoon salt
- 1/8 teaspoon black or white pepper
- Toss together the lima beans, pimiento, and green onion.
- Whisk together dressing ingredients; stir into bean mixture.
- Refrigerate for at least 1 hour.
