Whole roasted potatoes

what do they look like?

4 servings

  • 1/3 cup goose fat, or lard, or ghee, or oil
  • 4 medium potatoes rinsed and dried
  • Sea salt and freshly ground black pepper to taste.
  1. heat the oven to 200C or 400F
  2. heat the fat in the oven proof pan
  3. slice around potatoes, careful not to slice through the potato, to allow for the heat and fat to open an potato (around 5 mm between the cuts)
  4. drop potatoes into the hot fat, mix to cover them well
  5.  into the oven for about 1 hour
  6. turn them around occasionally, to make sure the fat covers all the surfaces
