Offered with Stuck-Pot rice, but can be an independent snack, or as salad component, or a delightful accent on a plate of pasta..
The Alabama seasoning, not necessarily available in many parts of the world, is a mix of dry mustard, sweet paprika, celery seed, bay leaf, black and red pepper, cinnamon, cloves, allspice, nutmeg, salt, mace and ginger. You can choose to make some and have it for many culinary experiments or just use some ingredients to taste.. I am very happy making this one and storing it – just as i do, for example, with creole seasoning – absolutely wonderful and not at all banal flavouring.
Serves 4.
- 18 large shrimp,
- 1 tsp. finely chopped garlic,
- 125 ml flour for dredging,
- salt, pepper,
- 1/2 tsp Alabama seasoning,
- 1/2 tsp paprika,
- 1 tsp+1 tbsp. extra virgin olive oil.
- Pre-heat broiler.
- Clean and remove shells of shrimp.
- Place in bowl with chopped garlic and 1 tsp olive oil.
- Set aside while preparing the flour.
- Mix flour with ¼ tsp. salt, some freshly ground pepper, ½ tsp. Alabama seasoning, and 1 tsp. paprika.
- Heat 1 tbsp. olive oil in baking pan.
- Dredge shrimp in flour mixture and place in baking pan.
- Place under broiler and broil for 3 minutes. Turn shrimp and broil for 3 more minutes.
- Take out and pour over the rice.
