This is perfect with the chicken thighs, and also grilled fish. It works as a topping for bruschetta too.
Makes about 2 cups.
- ½ cup chopped red onion
- 1 cup chopped kalamata or other olives
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- 1 teaspoon chopped fresh thyme
- ¼ teaspoon chili flakes
- 2 tablespoons chopped parsley
- 2 seeded and chopped plum tomatoes
- Salt and freshly ground pepper
Combine all ingredients together. Serve with chicken.
