- 1/3 cup goose fat, or lard, or ghee, or oil
- 4 medium potatoes rinsed and dried
- Sea salt and freshly ground black pepper to taste.
- heat the oven to 200C or 400F
- heat the fat in the oven proof pan
- slice around potatoes, careful not to slice through the potato, to allow for the heat and fat to open an potato (around 5 mm between the cuts)
- drop potatoes into the hot fat, mix to cover them well
- into the oven for about 1 hour
- turn them around occasionally, to make sure the fat covers all the surfaces
