Good with greens, vegetables or grains.
Makes 1 cup.
- 1 small ripe avocado,
- ¼ cup lemon juice,
- ½ teaspoon salt,
- 1 small clove garlic, pressed,
- 1/3 cup buttermilk or plain yogurt,
- Salt and pepper to taste.
- Mash the avocado in a bowl with the lemon juice until it is smooth.
- Add the other ingredients and blend well.
- Taste and adjust the seasonings as desired, adding pepper and salt if required.
The dressing should be used the same day it is made.
