Grilled rack of ribs

  1. Rub the meat with spices, fold tightly into aluminum foil, let sit for about 20-30 minutes
  2. Set the oven to 300-325F
  3. Roast the meat in the foil, about 2 hours
  4. If you wish you may prepare grilling sauce (the rub is dry – you may expect some juice out of the roasting process, but it may be smart to be prepared. I use the same rub, diluted with some water, some hot sauce, some honey..)
  5. When the meat is out of the oven, set the broil on (or have a hot bbq ready)
  6. Place the ribs on the grilling rack, brush some sauce on, grill on each side 10-15 minutes, depending on the facility. Yo want the ribs to remain in one piece, but be nicely browned and hot
  7. Place the whole rack(s) on the large wooden board and serve (cut at the table..).
