Grilled rack of ribs

- Rub the meat with spices, fold tightly into aluminum foil, let sit for about 20-30 minutes
- Set the oven to 300-325F
- Roast the meat in the foil, about 2 hours
- If you wish you may prepare grilling sauce (the rub is dry – you may expect some juice out of the roasting process, but it may be smart to be prepared. I use the same rub, diluted with some water, some hot sauce, some honey..)
- When the meat is out of the oven, set the broil on (or have a hot bbq ready)
- Place the ribs on the grilling rack, brush some sauce on, grill on each side 10-15 minutes, depending on the facility. Yo want the ribs to remain in one piece, but be nicely browned and hot
- Place the whole rack(s) on the large wooden board and serve (cut at the table..).
