Batter
- ½ cup+2 tbsp butter
- 1 cup sugar
- 2 eggs, well beaten
- ½ cup+2 tbsp self rising (cake and pastry) flour
- 1 1/3 cup ground almonds
- ½ cup milk
- 1 tsp vanilla extract
- 1 tbsp boiling water
- ½ tsp baking powder
Other Ingredients
- 8 pitted prunes, minced (or sliced, if such preference)
- 1 cup finely minced walnuts, mixed with 2 tbsp sugar
- 2 green apples, cored and sliced
- 3 tbsp sugar
- Ground cinnamon (option)
- Butter
- Set the oven for 375F (190C?)
- Cream together all the batter ingredients in a food processor, running it for 10 seconds.
- Run a spatula around the bowl and process for 5 more seconds
- Put the batter into a well buttered 10 inch round cake pan
- Place the prunes on the batter
- Spoon the walnut and sugar mixture over
- Arrange the apple slices on top of the walnuts
- Bake in preheated oven for 45 minutes
- Sprinkle the surface with sugar and some cinnamon (if using)
- Dot with butter
- Bake for additional 25 minutes till the skewer comes out clean
- Cool in pan
