Creamy Herb Dressing

This creamy dressing is good in summer salads, especially ones with mixed lettuce that feature lots of vegetables and some herbs (example: potatoes with beans and cherry tomatoes).

For about 250 ml:

  • 60 ml mayonnaise
  • 60 ml white wine vinegar
  • 1 tablespoon chopped tarragon
  • 1 tablespoon chopped parsley
  • 2 tablespoons chopped chives
  • 120 ml olive oil
  • Salt and freshly ground pepper

Whisk together mayonnaise, vinegar, tarragon, parsley and chives in a bowl. Slowly whisk in oil.  The dressing should emulsify. Season with salt and pepper.
