Perfect companion to beef tongue, to boiled chicken..
- 2 tsp sugar, granulated
- 1 tbsp butter, unsalted
- 500ml beef broth, also possibly produced while boiling beef tongue
- 1 tsp vinegar
- 1/2 tsp lemon zest
- 125ml almonds, blanched and chopped
- 2 tsp water
- 3 tbsp flour, all purpose
- 2 tsp lemon juice
- 125 ml raisins
- Carmelize the sugar and water.
- Add butter, flour and broth and boil to the bubbling stage.
- Add remaining ingredients.
- Add subject of the course (sliced beef tongue, chicken, fish..) and bring to a boil.
