Lima Bean Salad

Serves 4

  • 2 cups cooked lima beans
  • 1 tablespoon chopped pimiento
  • 2 finely chopped green onions
  • 2/3 cup sour cream
  • 1 tablespoon red wine or balsamic vinegar
  • 2 teaspoon lemon juice
  • 1 teaspoon sugar
  • 3/4 teaspoon salt
  • 1/8 teaspoon black or white pepper
  1. Toss together the lima beans, pimiento, and green onion.
  2. Whisk together dressing ingredients; stir into bean mixture.
  3. Refrigerate for at least 1 hour.
