To make about 200-225g as wanted for a good size stollen, for example, you need

  • 150g of almonds, steamed (or immersed in the hot water for a few minutes), peeled
  • 1 egg
  • 65-70 g sugar

Quantities multiply well – i would keep a single egg as long as possible, if increasing quantities of almonds and sugar and consider adding another egg only when really double/triple amounts are in the play.

  1. Grind the almonds into dust
  2. Drop the powder into a processor (or leave them there, as the case may be)
  3. Add an egg and sugar
  4. Blend well – the result tends to be rather thick, so watch out, the machine will complain towards the end

I keep it in the fridge until needed; i also successfully froze it (in single-use portion chunks, wrapped tightly in parchment and sealed in a freezer bag) in deep freeze since X-Mas till Easter.. Very positive discovery!
