Good, light and easy soup for 4 people – the equivalent of zupa cytrynowa.
- 4 cups of beef, veal or vegetarian stock
- ½ cup of sour cream (not really necessary if using egg yolks and milk – just a decadent accent)
- 1 or 2 egg yolks
- 1/2 cup cold milk
- 1 cup of cooked rice
- Salt
- Lemon
- Heat the stock
- Add salt, add sour cream (take few spoons of hot soup, add them to sour cream, mix, pour all back into the soup)
- Slice the lemon into thin slices
- Keep the soup hot
- Add rice, heat all up
- Take the soup off the burner
- Mix the egg yolks with the milk, pour into the soup, do not boil, just re-heat gently
- Add lemon slices to soup
- If needed, add more lemon juice (soup should be lemony tart)
- Serve and enjoy!
