Very successful – even if you do not go for the concept of zucchini bread but, for example, you like the chocolate cake.
- 2 1/3 cup flour
- 2 cups sugar
- 1 tsp salt
- 1 tsp ground cinnamon
- 2 tsp baking soda
- ½ cup unsweetened coca
- ½ cup chopped nuts (walnuts? I also used pecans)
- ½ cup chocolate chips
- 3 eggs
- 1 cup veg oil
- 2 tsp vanilla extract
- 3 cups grated zucchini
- Set oven to 325F
- Grease two 9×5 bread forms
- Mix all dry stuff (flour, salt, baking powder, baking soda, sugar, cinnamon, cocoa)
- In large bowl beat eggs, add oil, vanilla, zucchini
- Add dry stuff gradually, mixing well
- Add nuts and choc chips, fold well
- Divide the batter between the two forms
- Bake 60-65 minutes (until ready)
