Sos Szary (gray sauce)

Perfect companion to beef tongue, to boiled chicken..

  • 2 tsp sugar, granulated
  • 1 tbsp butter, unsalted
  • 500ml beef broth, also possibly produced while boiling beef tongue
  • 1 tsp vinegar
  • 1/2 tsp lemon zest
  • 125ml almonds, blanched and chopped
  • 2 tsp water
  • 3 tbsp flour, all purpose
  • 2 tsp lemon juice
  • 125 ml raisins
  1.  Carmelize the sugar and water.
  2. Add butter, flour and broth and boil to the bubbling stage.
  3. Add remaining ingredients.
  4. Add subject of the course (sliced beef tongue, chicken, fish..) and bring to a boil.
