Danish Apple and Prune Cake

 Batter

  • ½ cup+2 tbsp butter
  • 1 cup sugar
  • 2 eggs, well beaten
  • ½ cup+2 tbsp self rising (cake and pastry) flour
  • 1 1/3 cup ground almonds
  • ½ cup milk
  • 1 tsp vanilla extract
  • 1 tbsp boiling water
  • ½ tsp baking powder

Other Ingredients

  • 8 pitted prunes, minced (or sliced, if such preference)
  • 1 cup finely minced walnuts, mixed with 2 tbsp sugar
  • 2 green apples, cored and sliced
  • 3 tbsp sugar
  • Ground cinnamon (option)
  • Butter
  1. Set the oven for 375F (190C?)
  2. Cream together all the batter ingredients in a food processor, running it for 10 seconds.
  3. Run a spatula around the bowl and process for 5 more seconds
  4. Put the batter into a well buttered 10 inch round cake pan
  5. Place the prunes on the batter
  6. Spoon the walnut and sugar mixture over
  7. Arrange the apple slices on top of the walnuts
  8. Bake in preheated oven for 45 minutes
  9. Sprinkle the surface with sugar and some cinnamon (if using)
  10. Dot with butter
  11. Bake for additional 25 minutes till the skewer comes out clean
  12. Cool in pan
