Honey and lemon glazed carrots

Serves 4.

  • 1lb. carrots, cut on the diagonal into 1/4 inch slices
  • 2 tbsp. butter, unsalted
  • 1/2 tsp. freshly grated lemon rind
  • 2 tsp. Honey
  • 2 tsp. fresh lemon juice or to taste
  • 1 ½ cup water
  1. In a skillet, combine the carrots, butter, the rind, honey, and water
  2. Boil the mixture, shaking the skillet occasionally, until almost all the liquid is evaporated.
  3. Add lemon juice and salt to taste.
  4. Cook the mixture over low heat, stirring, for seconds, or until the carrots are coated well with the glaze.
