Winter Fruit Crumble

Serves 4-6

Fruit layer:

  • 600 g mixed frozen fruit (mixed berries, mango, whatever you have)
  • some sliced apple (optional)
  • 1 tsp finely chopped lemon peel
  • 1 tsp vanilla
  • ¼ cup corn starch
  • ¼ cup sugar

for crumble:

  • ½ cup flour
  • ½ cup sugar
  • ¼ cup cold non salted butter, cut into small pieces
  • dash of cardamom
  • some anise seeds
  • ½ tsp cinnamon
  1. set the oven to 350F/180C
  2. prepare crumble: mix dry ingredients, add butter, and work with your fingers until all mixed into uniform crumble
  3. mix corn starch and sugar
  4. mix all fruit together
  5. add vanilla and lemon, mix
  6. add starch/sugar mixture, fold into fruit
  7. turn fruity stuff into an ovenproof dish, make sure it fits comfortably
  8. sprinkle the crumble stuff over the fruit
  9. place the dish on a baking sheet, just in case of some excessive dripping
  10. all of it into the hot oven, for about 45-50 minutes
  11. if not turning gold by then, apply a brief broiling treatment to brown the surface a bit
  12. serve hot or warm, leftovers keep well in the fridge (covered), and some like it cold as well.
