Avocado Dressing

Good with greens, vegetables or grains.

Makes 1 cup.

  • 1 small ripe avocado,
  • ¼ cup lemon juice,
  • ½ teaspoon salt,
  • 1 small clove garlic, pressed,
  • 1/3 cup buttermilk or plain yogurt,
  • Salt and pepper to taste.
  1. Mash the avocado in a bowl with the lemon juice until it is smooth.
  2. Add the other ingredients and blend well.
  3. Taste and adjust the seasonings as desired, adding pepper and salt if required.

The dressing should be used the same day it is made.
